More Favorite Recipes

I have a very dear friend who sent me some of her favorite recipes to share.  Denise lives right outside of Atlanta and is such a great cook that I will share these before I try them.


1 cup bell pepper, chopped          2 pkgs. refrigerated pizza crust
¾ cup onion, chopped                  8 oz. thin sliced roast beef
1 tbsp. vegetable oil                     8 oz. thin American cheese
2 garlic cloves, pressed                1 egg white, lightly beaten
1 tsp. dried oregano, divided        1 tbsp. water

Heat oven to 400 degrees.  Heat oil in pan.  Press garlic cloves, add vegetables.

Unroll 1 pizza crust and lightly flour rolling pin.  Roll out crust to a 12×9 rectangle size.  Cover with ½ of beef , cheese and vegetable mixture to within ½” of edge.  Roll up dough long ways; press seams together.  Repeat with other crust.  Place seam side down on round stone to form a large ring.  Bake 20-25 minutes


3-4 chicken breasts
2 cups Salsa or picante sauce
Cheddar cheese, shredded
1 can black beans, drained
2 cans whole kernel corn, drained
Flour tortillas (heated)

Rinse black beans.  Combine with corn.  Add ½ cup salsa or picante sauce.  Mix well.  Place in crock pot.  Top with chicken breasts.  Add remaining salsa or picante sauce.  Cook on low 8-10 hours.  The last 10 minutes, remove lid and top with cheese.  Let melt and serve with flour tortillas.


Boneless (or bone-in) pork chops
A little salt & pepper (more herbs if you’re fancy)
2 carrots (peeled)
1 can cream of mushroom OR chicken & rice OR cream of chicken soup.

Place a little soup in the bottom of crock pot, slice carrots and place into pot, put a little more soup in, place pork chops in pot, add rest of soup, a little salt and pepper. Place lid on and turn to low.  Cook until done.


1 cup light brown sugar, firmly packed              2 eggs, beaten
½ cup all purpose flour                                     2/3 cup butter, melted
½ cup chopped pecans

Preheat oven to 350 degrees.  Line muffin cups with silver muffin liners.  In bowl, stir together brown sugar, flour and pecans.  In separate bowl, beat eggs and butter together until smooth.  Stir into dry ingredients until just combined.  Spoon batter into muffin cups, about 2/3 full.  Bake for 20 to 25 minutes.  Cool on wire racks when done.

Now I am hungry!  I think I will go make some Pecan Pie Muffins, they sound delicious!!
