One of the groups I belong had a recipe share recently and some of the creations sounded so delicious I just had to share.
***Posh Potato Casserole ***
8 medium potatoes
1 bay leaf
1/4 cup melted butter
1 can cream of chicken soup
2 cups sour cream
1 teaspoon salt
1/4 teaspoon pepper
3 green onions, chopped
2 cups sharp cheddar cheese, grated
1/4 cup bread crumbs
Boil potatoes with bay leaf until barely tender. Cool, peel and grate coarsely.
In medium bowl, Add melted butter to soup. Blend in sour cream, salt, pepper, onion, and 1 1/2c cheese. Pour over potatoes and stir gently.
Spoon into a buttered 13×9 casserole. Bake unocvered in 350 degree oven for 30 minutes.
Sprinkle remaining 1/2 cup cheese and bread crumbs on top, bake 10 minutes longer.
***Peanut Butter Truffle Cookies***
1c. Skippy creamy Peanut Butter
1c. Firmly packed light brown sugar
1 large egg
1tsp. Baking soda
1/2c Semi sweet chocolate morsel
1. Preheat oven to 350. In a small bowl with wooden spoon combine all ingredients except chocolate chips until blended. Stir in choclate chips just until blended.
2. On ungreased baking sheet using slightly rounded teaspoon drop dough 2″ apart (do not flatten)
3. Bake 9 mins. or until cookies are puffed and golden (cookies will be very soft) Let stand at least 3mins to cool remove from cookie sheet and let finish cooling.
***Savory Meatloaf ***
1 1/2 lb. ground beef
1 can (10 3/4 ounces) Condensed Tomato Soup
1/2 cup dry bread crumbs
1 egg, beaten
1 small onion, finely chopped (about 1/4 cup)
1 tbsp. Worcestershire sauce
1/8 tsp. ground black pepper
1/4 cup water
Thoroughly mix the beef, 1/2 cup of the soup, bread crumbs, egg, onion, Worcestershire sauce and black pepper. Put the mixture into a 13 x 9-inch baking pan and firmly shape into an 8 x 4-inch loaf.
Bake at 350°F. for 1 hour or until the meatloaf is cooked through. Remove the meatloaf with a pancake turner from the pan to a cutting board.
Heat 2 tablespoons of the pan drippings, the remaining soup and water in a 1-quart saucepan over medium-high heat until the mixture is hot and bubbling. Serve with the meatloaf.
You can substitute ground beef with ground turkey
Substitute tomato soup with tomato sauce.
Substitute bread crumbs with cracker crumbs.
Substitute Worcestershire sauce with garlic powder and Italian seasoning.
1 cup pineapple chunks, drained
1 cup mandarin oranges, drained
1 cup flaked coconut
1 cup miniature marshmallows
1 cup sour cream
1 cup chopped pecans (optional)
1. Drain fruits well.
2. Mix all ingredients together. Cover and chill several hours or overnight and serve.
***ROCKY ROAD TOFFEE CRISPS ***
24 chocolate (2 1/2-inch) graham cracker squares
1/2 cup Butter, melted
1 (12-oz) pkg (2 cups)semi-sweet chocolate chips
1 cup white baking chips
1 cup English toffee bits
2 cups miniature marshmallows
Heat oven to 350°F. Line 15x10x1-inch jelly-roll pan with graham crackers so sides touch. Pour melted butter evenly over crackers; sprinkle with 1 1/2 cups chocolate chips and white baking chips. Bake for 8 to 10 minutes or until butter is absorbed.
Spread melted chips over graham crackers; sprinkle with toffee chips and marshmallows. Continue baking for 3 minutes or until marshmallows begin to soften.
Meanwhile, place remaining chocolate chips in small resealable plastic food bag. Microwave on MEDIUM until chips are melted (2 1/2 to 3 1/2 minutes). Snip small hole in one corner of bag. Drizzle chocolate over bars. Cool completely. Cut into bars.
