This past weekend we finally had enough lima beans to harvest. Just a few months ago our plants were looking good and growing strong but it does take a long time for lima beans to develop in the pods.
Saturday we harvested the beans which is a real challenge. The bean pods are the same color as the leaves and the bushes are so thick the pods hide in the middle. We were dilligent and managed to harvest these beans.
I blanched the beans and added some corn and a little butter to make succotash. It was so good and we are always thrilled when we reap benefits from our garden. Thank you, Lord, for the blessings of our labor.
